Stuffed Zucchini

This one of my favorite ways to use zucchini!  I had to veganize it a bit.  I used to add oil and cheese.

6 medium zucchini
1 small onion
1 c. whole wheat bread crumbs (I put slices of bread in my food processor after drying them).
1 clove garlic
1T. soy sauce
1t. grainy mustard

Cut zucchini in half.  Boil in a pot of water for 10 minutes.  Cool.  Spoon out the inside, leaving the shells in tact. Mix the zucchini insides w/ the bread crumbs, garlic, onion, soy sauce and mustard.  Put all in a food processor.  Fill all the shells and place on a cookie sheet.  Top w/ vegan parmesan cheese.  Put in the broiler until the top is brown.  Watch closely as the cheese can burn quickly.
