So many of my concoctions are just based on what I have in the fridge and need to use up. Such is this recipe.
One bag of brussel sprouts, washed, pared and cooked.
1 red pepper, chopped
1/2 onion, chopped
2 stalks of celery chopped
1 - 15 oz. can diced tomatoes
1 c. quinoa
3 c. veg. broth or H2O
1 t. basil
1 t. oregano
1 t. garlic powder
Cook in a crock pot on low until the quinoa is absorbed.
