Today I made a recipe from Forks Over Knives and Engine 2 Diet. It is called Sweet Potato Raise the Roof Lasagna. I made a few changes, due to the food I had on hand, but it was a power, plant-based, delicious meal. I substituted canned mushrooms for fresh, skipped the tofu, and used cooked squash instead of sweet potatoes. The result was fantastic. I highly recommend that you obtain both books, if you are attempting a plant-based diet. I will tell you that I only used about half of the veggies for the first layer, and the pan was still full at the end. I added the leftover pasta sauce to the veggies and added a can of kidney beans. I may add some rice or pasta, or just eat as is for lunches this week.
Next I took a jar of homemade applesauce, approximately 2 cups, and added a cup of oatmeal and baked it for a half an hour at 350. Wow!!! Great dessert
