First, I need to thank God and my mother for something. I thank God for my body, especially my taste buds. I thank my mom for making me eat my vegetables. It would be awfully hard if I did not like a variety of fruits and vegetables.
Now to my concoctions...my kids will tell you, that when using up leftovers, I got quite creative, or they might say weird:) I also learned this from my Mom. I come from a family of eight children my Mom used every morsel and we were glad to eat it.
Tonight I used steamed cauliflower, which I ground in a food processor w/ almond milk and garlic. Then I ground four medium potatoes with a raw onion and about a cup of leftover stewed tomatoes that I made. I mixed both purees together(it had the consistency of mashed potatoes) and heated a bowl in the microwave over some cooked cabbage. I know that it sounds really strange, but it was so good!
Try your own concoction w/ leftovers. You may be surprised.
