Wow...a very hot and humid day today! I didn't feel like a big meal for supper, but a salad sounded good. I even got my hubby hooked on walnuts in his salad!
Meals today:
2 - squares cornbread
banana
sm. pkg. peanuts
bowl of leftover asparagus/potato salad
sm. pkg. cashews (definitely stress eating)
3 - apples
broccoli salad
salad
2 slices seitan
1 - sq. cornbread
I made a batch of oatmeal for the next few days.
I had mixed some OJ w/ balsamic vinegar and oil for a quick salad dressing. It had great flavor, but didn't stick to the veggies. I added a few T. of hummus to the dressing. That was just the ticket and very tasty.
