1/2 lb. vegan sausage
1 lb. whole wheat penne pasta, uncooked
2 T. olive oil (optional)
veggies - I used onions and mushrooms
2 - 15 oz. cans diced tomatoes
4 garlic cloves minced
1/4 c. vodka
1/2 c. soy sour cream
1/4 c. rice milk
Brown the vegan sausage.
Boil the penne pasta.
Add the remaining ingredients.
Mix pasta w/ sauce.
This recipe was very good. My non-vegan husband at two servings:)
