Giving Blood

Today I was able to give blood.  The phlebotomist was a vegetarian.  We chatted about different foods and reasons for why we chose the lifestyle.  We also chatted about foods that you would assume are vegan or vegetarian, but something is hidden in them, such as gelatin:)  I have met so many nice and helpful folks when chatting about being vegan.

I walked in, curious as to if I might be turn away for my iron being low.  To my surprise, it was 15.  She stated that my iron was above average for a woman my age.  Eating vegan has not impacted me at all, so far.  I have more energy and I seem to sleep better than I have in a long time.

I had an impromptu lunch meeting called today, "lunch provided", but any good vegan comes prepared.  I brought my own lunch and ate that as there wasn't one thing I could eat.  I did talk to the gal that orders lunch as this plant and she said that she'd be happy to accommodate me in the future.

Dinner tonight was boiled potatoes,vegan gravy, "creamy" cauliflower, and a slice of three bean loaf.  I had prepared the three bean loaf and frozen for a quick meal.  Next time I make this loaf, and I will, I'd like to make it in smaller loafs, or maybe a large muffin tin.

Creamy cauliflower
Boil a head of cauliflower until soft.  Mash like potatoes.  Add sour cream.  I used about 1/2 c. Add  salt and pepper to taste.  Some people call this mock mashed potatoes.

  2. I just found your blog and have been reading back. I've been vegan since 1/1/10. I live in South Louisiana and it is definitely difficult to eat out. I do cook most of our food at home, but I know a few places where I can eat, mostly ethnic restaurants like Japanese and Lebanese. My husband is now working in Seattle and they have a load of vegan restaurants. I have so much fun going into a place and knowing I can pick from ANYTHING off the menu! Such a thrill! :^)

    I've also found that my iron levels are higher now than pre-vegan (I was always borderline anemic) and my cholesterol went from 205 to 168.
