Cooking

I spend the weekend cooking, so that I can just heat and eat during the week.  Today I made coleslaw, broccoli salad, a fruit salad, asparagus quiche (w/ tofu), a large pot of chili, sweet potato salad, and asparagus quinoa.  Phew!  I love to cook.  Much of this will be frozen for lunches, and pulled for dinners throughout the week.

I bought two bags of fresh asparagus from a lady at work.  I had to find some recipes, so I Googled asparagus vegan, and voila, I found the asparagus quiche and quinoa recipes.  I still have one bag left to cook, but that is going to be my dinner one night.  Did I mention that asparagus is my favorite veggie?!

Next I am going to Google freezing or canning asparagus, yum!!!
